A crumbly, buttery taste, with that perfect kick of cinnamon, this swirl is the perfect biscuit- pastry combo.
Ingredients:
-180g plain flour
-125g butter
-50g caster sugar
For the cinnamon filling:
-50g light brown sugar
-10g butter
-2 tbs ground cinnamon
Method:
- In a large mixing bowl rub the butter and flour between your fingers until it resembles fine breadcrumbs. Add in the sugar and mix. Compact into a ball of soft dough and leave in the fridge until needed.
- To make the filling, add the brown sugar, butter and cinnamon, mix until resembles a paste.
- Remove the dough from the fridge and roll it out on a surface covered with icing sugar so that it doesn’t stick.
- Spread an even layer of the cinnamon paste over the dough. Roll the dough tightly and slice into wheels.
- Flatten with the palm of your hand or using the back of a spoon and place them on a lined baking tray.
- Bake in the oven for 10 minutes, check and bake for another 10 minutes.
- Once cooked and golden, leave to cook on a wire rack. Once cooled dust with icing sugar and serve.
