Ingredients:

  • 80g plain flour
  • 125g butter
  • 50g caster sugar

Method:

  • Rub the butter and flour in a bowl until it resembles fine breadcrumbs.
  • Mix in the sugar
  • Mould the dough into a compact ball.
  • Chill in the fridge for 15 minutes
  • Pre-heat oven to 180 C
  • Dust a surface will icing sugar and roll out the dough.
  • Cut into fingers and place on a lined baking tray.
  • Bake for 10 mins and check and turn, bake for another 5 min or until biscuits are golden brown in colour.
  • Sprinkle with sugar and serve.
