This recipe uses vegetarian sausages, but they can easily be swapped for regular sausages if you prefer.

Ingredients:

  • Tbsp of olive oil.
  • 1/2 red onion – finely chopped
  • 3 tbsp of caramelised red onion chutney.
  • 2 sprigs of fresh rosemary – finely chopped.
  • 6 vegetarian sausages – deskinned.
  • 100g of Cheddar Cheese
  • Salt and pepper, to taste.
  • Sheet of pre-rolled puff pastry.
  • 1 egg beaten.
  • Handful poppy seeds

Method:

  • Heat olive oil in a pan and add red onion.
  • Cook for 5 mins until soft
  • Add chutney and rosemary. Cook for a further 2-3 mins, remove from heat and set aside.
  • Add onion chutney mixture to a large bowl along with sausage meat, cheese and season well. Mix it all together until combined.
  • Roll out your sheet of puff pastry and slice down the middle lengthways. Split your sausage mixture into two and then lay down the length of your puff pastry sheet.
  • Roll the pasty and seal at the base, cut into smaller rolls
  • Repeat with the other sheet of pastry
  • Place on a tray and brush with egg and sprinkle with poppy seeds
  • 8.Cook int the oven for 20 mins.
  • 9.Remove from the oven once cooked and an even golden colour
  • 10.Let them cool for a couple minutes then enjoy 🙂
