Simple, Versatile, Classic. This effortless recipe makes the perfect cake to whip up for any occasion. I recently made one for my Grandad’s birthday!

Ingredients:

  • 170g Butter
  • 170g Caster sugar
  • 3 eggs
  • 170g Self raising flour
  • 1 Tsp Baking powder
  • Tsp Vanilla essence

Fill with:

  • Strawberry Jam
  • Fresh whipped cream

Method:

  • In a large mixing bowl, cream together the butter and the sugar. Beat in the eggs.
  • Add the flour and mix until you have a smooth batter. flavour with the vanilla essence and add in the baking powder.
  • Pour into your desired cake tins and cook for around 15-20 minutes, until the cake is golden in colour and has a springy bounce when pressed.
  • Once cooked leave to cool on a wire rack.
  • When cooled spread the jam on one layer of cake and on the other spread the cream.
  • Lift up one of the layers and place it onto so that the jam and the cream form and sandwich between the sponge layers.
  • Dust with icing sugar and serve with fresh strawberries.
