Simple, Versatile, Classic. This effortless recipe makes the perfect cake to whip up for any occasion. I recently made one for my Grandad’s birthday!

Ingredients:
- 170g Butter
- 170g Caster sugar
- 3 eggs
- 170g Self raising flour
- 1 Tsp Baking powder
- Tsp Vanilla essence
Fill with:
- Strawberry Jam
- Fresh whipped cream
Method:
- In a large mixing bowl, cream together the butter and the sugar. Beat in the eggs.
- Add the flour and mix until you have a smooth batter. flavour with the vanilla essence and add in the baking powder.
- Pour into your desired cake tins and cook for around 15-20 minutes, until the cake is golden in colour and has a springy bounce when pressed.
- Once cooked leave to cool on a wire rack.
- When cooled spread the jam on one layer of cake and on the other spread the cream.
- Lift up one of the layers and place it onto so that the jam and the cream form and sandwich between the sponge layers.
- Dust with icing sugar and serve with fresh strawberries.
